RED VELVET


Red Velvet cake

Resepi asal: thanks to Jom Masak

Bahan A:
2 1/2 cups tepung naik sendiri
2 sudu besar serbuk coco
1 sudu kecil baking powder
= ayak bersama

Bahan B:
150g butter
3 biji telur
1 1/2 gula castor

Bahan C:
1 1/2 cups susu segar (Goodday)
1 sudu besar cuka (cuka masakan biasa)
= untuk membuat buttermilk, bancuh cuka kedalam susu segar
Dan biarkan 10-15 minit

2 sudu kecil vanila
2 sudu besar perwarna merah (saya guna red oil)
1 sudu kecil baking powder
1 sudu kecil cuka

Topping
250g cream cheese
1 1/2 cups gula ising
3 sudu besar butter

Cara:
Masukkan Bahan B, kecuali telur dan mixer sehingga sebati
Dah kembang baru masukkan telur satu per satu dan pukul hingga betul2 sebati
Sementara itu, masukkan pewarna dan vanila ke dalam bancuhan buttermilk td dan kacau
Tuangkan Bahan A dan buttermilk secara selang seli ke dalam adunan sehingga habis
Pukul sehingga adunan sebati untuk pastikan pewarna merah telah betcampur rata
Dalam kelas gelas kecil add kan baking powder + cuka
Kacau rata, klu dah mendidih masukkan ke dlm adunan
Dan kacau perlahan dengan senduk/sudu
Bahagi kepada 2 bahagian
Bakar 1 bahagian dulu selama 15-20 minit 170C
Dah sejuk biarkan
Seterusnya bakar bahagian 2 pula
Tunggu sejuk baru letak topping






JAPANESE LIGHT CHEESE CAKE

cream cheese mixture:
A: 400g fresh milk (i used 550g/ml)
250 gm cream cheese
60g plain flour, sieved

B: 5 egg yolks
20g lemon juice

C: 5 egg whites
100g castor sugar (i used 120g)

method:
1.preheat oven to 180c.
2. double boil the cream cheese n milk until dissolved. add plain flour, stir n cook until the mixture has thickened. removed from the heat n leave to cool. add B and stir well.
3. whick C at high speed until soft peek is formed. slowly mix in the mixure 2.
4. strain (tapis) the cheese mixture in the cake tin,
5. steam bake the cake in the preheat oven at 180c for 20 mins. reduce the heat to 140c and bake for another 1hr and 45 min or until cook.
6. leave the cake to cool in the oen for 1 hr.. chill for 4 hrs before serve.

CARROT WALNUT CAKE

carrot walnut cake

recipe taken from: my secret recipes series(Y3K)~delicious cake

ingredients:
250g butter
300g castor sugar
2tsps vanilla essence
5 eggs
250 grated carrot
120 choc chips
120g chopped walnut 核桃(toasted, choped)
150g pineapple(cubed)

sieved ingredients:
250 superfine flour
80g self rising flour
2tsps cinnamon flour(我沒放)

cream cheese frosting:
150g cream cheese(at room temperature)
70g butter
70g icing sugar
1tsp lemon juice
coca powder for frosting(我沒放)
*i add in 2tbsp of sweeten creamer milk(optional)


method:
1. preheat oven at 180'c
2. in a mixing bowl. beat butter, vanilla esence and sugar on a medium speed untill creamy. gradually add in eggs one at a time
3. turn to slow speed & add in carrot n sieved ingredient. lasty fold in choc chips, walnut n pineapple cubes.
4. bake cake for 1 hour or until baked through.

5. remove cake from pan n leave to cool. spread with cream cheese frosting.


cream cheese:
1. beat cream cheese, butter , sugar, milk an dlemon juice until light n creamy.
2. sprad on cooled cake.

SUPER EASY MEAT FLOSS CAKE

Meat floss cake



Ingredients
70g plain flour
1 tsp baking powder
½ tsp bicarbonate of soda
3 eggs (I used grade A)
150g caster sugar
120ml corn oil
¼ tsp salt
70g meatfloss/chicken floss(I used meatfloss)
Method:
1. Grease and line a 10cmx20cm(4x8 inches)loaf pan. Preheat oven to 175’c
2. Combine flour, baking powder and soda in a mixing bowl
3. Combine eggs, sugar, oil and salt. Stir into flour mixture together with the meatfloss until well blended.
4. Spoon mixture into prepared pan. Bake in oven for 35-40 mins. Stand for 10 mins and turning on to wire rack to cool.
5. Spread thinly frosting on top of the cake, sprinkle with meatfloss for decoration.

Red velvet cake

erm..I'm not good in baking but i'd  tried out this recipe and it turn out realy nice eventhough my cake doesnt look attempting...will try to imporve my baking skill.. taken the recipe from the "joy of baking', but i'd altered a bit.
Instead of looking like these:

my cake looks like this!!!..hahahaha..but it's nice you know...huhuhu..dont judge the cake by it's 'cover'.

 


Red Velvet Cake:

2 1/2 cups (250 grams) sifted all purpose flour 
1/2 teaspoon salt
2 tablespoons (15 grams) milo
1 stick of butter (250g), at room temperature
1 1/2 cups (300 grams) granulated white sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup (240 ml) milk
2 tablespoons liquid red food coloring
1 teaspoon white  vinegar
1 teaspoon baking soda

Cream Cheese Frosting:
1 stick (250 grams) cream cheese, room temperature
1 stick (250 grams) butter, room temperature
1 teaspoon pure vanilla extract
1 cup (115 grams) confectioners' (icing or powdered) sugar, sifted


DIRECTION:
  1.  Preheat oven to 350 degrees F (175 degrees C)
  2. In a mixing bowl sift together the flour, salt, and cocoa powder. Set aside.
  3. In bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes).
  4. Add the sugar and beat until light and fluffy (about 2-3 minutes). Add the eggs, one at a time, beating well after each addition.
  5.  Add the vanilla extract and beat until combined.
  6. whisk the milk with the red food coloring. With the mixer on low speed, alternately add the flour mixture and milk to the butter mixture
  7. In a small cup combine the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter. 
  8.  Bake in the preheated oven for approximately 25 - 30 minutes, or until a toothpick inserted in the center of the cakes comes out clean.
  9. Cool the cakes in their pans on a wire rack for 10 minutes. Once the cakes have completely cooled, you can spread the cream cheese.


Cream Cheese Frosting:

  1.  In the bowl of your electric mixer, or with a hand mixer, beat the cream cheese and the butter together until fluffy.and smooth.
  2. Add the vanilla and confectioners sugar and beat until smooth.
OPTIONAL STEPS:
  1. With a serrated knife, cut the cake  in half, You will now have four cake layers.
  2. Place one of the cake layers, top of the cake facing down, onto your serving platter. Spread the cake layer with a layer of frosting. 
  3. Frost the top and sides of the cake.
Remarks: 
I skip these because i'm lazy .  So I just spread the frosting all over the cake.  Besides, it's a home baking, no need to look fancy and attempting as long as it's yummy!
